Azerbaijani Shirin Plov (A Sweet Pilaf from Azerbaijan)



Shirin Plov is among the most traditional dishes of Azerbaijan, that originates from the capital of Baku. It contains a sweet flavor and is cooked only with Basmati rice that offers a unique taste.

Ingredients


  • 200 g basmati rice

  • 330 ml plant-based milk

  • 80 g unsalted vegan butter

  • 5 strands saffron

  • 50 g soft pitted dates

  • 50 g sultanas

  • 50 g dried apricots

  • Ras es Hanout & cinnamon sticks (https://www.roots-natural.com)


Directions


  1. Pour 50 ml of boiling water into a cup & add the saffron. Leave to infuse for 15 minutes.

  2. Wash the rice. Put the milk, butter & saffron into a pan, then add the rice. Bring to the boil and then leave to simmer until 2/3 of the milk has been absorbed.

  3. Add the fruits and spices to the pan, stir in, and leave over a low heat until the rice has cooked through. Nüs olsun! :-)
