It's not a Swahili breakfast without Mbaazi & Mandazi. Mbaazi which are also known as Pigeon Peas is a very popular dish in Tanzania, Kenya and especially in Mombasa, when cooked in coconut milk.
This dish is incredibly delicious and once you try it, you get addicted! ;)
Ingredients
1 onion
1 tsp garlic paste
250 g pigeon peas
1/4 tsp curry powder
1 tsp turmeric powder
salt, pepper
2 cups coconut milk
1 cup coconut cream
coconut oil
Directions
In a large pot, combine pigeon peas & coconut milk.
Cover & cook on a medium heat until the coconut reduces & the peas became tender.
Heat a few tsp of oil in a skillet. Add the chopped onion, garlic paste, curry powder, turmeric powder, salt & pepper. Cook for about 5 minutes and then add the mixture to the peas. Add the remaining coconut milk & simmer on the lowest heat until the coconut is completely absorbed.
In a separate pot, add 1 cup coconut cream & stir until it starts to boil. Reduce the heat to low & cook until it thickens. Remove from the heat.
Pour the cooked coconut cream on top or serve it separately.
Enjoy with mandazi.
